Fried chicken with black garlic mayonnaise

Ingredients for 4 people – Recipe by Marta Cerbino

Leave the chicken to marinate in the refrigerator overnight. Dip them in the flour, egg white and mix of breadcrumbs, polenta and sesame. Prepare the mayonnaise by leaving the black garlic cloves to rehydrate for 30 minutes in soy milk; then blend together with the other ingredients, with the help of an immersion blender. Fry the chicken pieces and serve with mayonnaise.

- 1kg of diced chicken breast

For the marinade
- 500g Greek yogurt
- 1 teaspoon of mustard powder
- 1 teaspoon of paprika
- 1 teaspoon of coriander powder
- Salt to taste.

For the breading
- “00” flour to taste
- 5 egg whites
- 200 g breadcrumbs
- 200 g craved polenta
- 2 tablespoons of sesame seeds

For the mayonnaise
- 125 ml soy milk
- 1 head black garlic
- 125 ml extra virgin olive oil
- 125 ml sunflower seed oil
- 10 ml apple cider vinegar
- Salt to taste.
- 1 teaspoon of mustard
