Black garlic Guacamole
We tried a variation of the Guacamole recipe with the addition of Vulcino black garlic, and it turned out well. Here it is for you to try.
Method
Start by preparing the avocados. Cut the avocados in half, remove the pit, and use a spoon to scoop out the flesh into a bowl.
Now it’s time to add lime juice to the avocados, but don’t overdo it. Lime helps prevent oxidation and gives a fresh flavor to the guacamole, but in this version with black garlic, it’s better not to use too much lime to avoid overpowering the garlic’s flavor.
Prepare the other ingredients. Dice the tomato into small cubes, removing the seeds. Finely chop the shallot and the jalapeño pepper (if you like). Peel and skin the black garlic cloves, take three cloves and mash them into a paste using the back of a spoon in a small bowl. Continue until they become creamy. This will make it easier to mix with the other ingredients.
Remember, Vulcino black garlic is softer than other black garlics on the market and is easy to turn into a creamy paste.
Add all the ingredients to the avocado bowl. Season with salt and Vulcino extra virgin olive oil. Mix and mash all the ingredients well until you get a homogeneous mixture. You can use an immersion blender for a creamier result if you prefer.
The black garlic guacamole is ready to be served! You can accompany it with tortilla chips, use it as a condiment for tacos, burritos, or other Mexican dishes.
