Black garlic is normal white garlic that is put through the Maillard reaction, turning the cloves black, soft, sweet and chewy, as well as removing garlic’s allicin, so …no “garlic breath”.
It is a very versatile condiment which enhances flavours with its complex umami mix of balsamic, licorice, truffle and mushrooms.
It has twice the amount of antioxidants compared to normal garlic.

Storage
In an airtight container or in its suitably closed sachet to maintain its scent and softness. It's fine both in the cupboard and in the fridge (but not in the freezer).
